This is a class Italian staple in my house. I grew up eating these earthy, garlic- breadcrumb stuffed leaves. I cook/steam these hearts in a dutch oven - passed on from my dearest Grams. I highly recommend using a dutch oven to get the best outcome. You could always use a regular large pot or casserole dish in the oven.
When buying your artichokes, buy one per person. I cook for two people and usually buy 2, but if they are on sale I'll buy more. These are okay for leftovers, but taste the best when freshly made.
Rinse the artichokes and then clip the stem off so the choke and stand up still. Then clip off the sharp tips of each leaf.
Next, take the choke -bottom up- and gently slam it down on the counter. This opens the flower, allowing you to slightly pull back each leaf to stuff the breadcrumb mixture with.
Ingredients:
Step 1: Mix all ingredients, minus the chicken stock, together in a bowl. Stuff each leaf with the mixture.
Step 2: Place the chokes in your dutch oven and pour the chicken stock up to about mid way of the first leaf (about an inch or so).
Step 3: Drizzle some olive oil over the top of each artichoke. Bring stock to a boil, then lower heat to a simmer. Cook chokes for about an hour. Test a leaf by it's readiness to pull off

- 2 -3 cups Italian style breadcrumbs (home made is best!)
- 2 -3 tablespoons of grated Parmesan Cheese
- about 2 cups of chicken stock (for cook steaming, can use water if no stock on hand)
- 1 tablespoon dried parsley
- 2 cloves of garlic, minced
- 1/2 teaspoon fresh ground black pepper
- 1/4 cup extra virgin olive oil
- Pinch of crushed red pepper (optional)
