This is a super easy and delicious side to add to any meal.
Ingredients:
Bring a big pot of salted water to a boil. Cut and discarding the bottom part of the stems from the Rabe (similar to celery). The cook in the water for about 2 minutes. This removes the bitterness and jump starts your cooking process. While you are doing this, get a big saute pan, coat with olive oil and add the chopped garlic and red pepper flakes and bring to medium heat. Once you have the aroma of cooked garlic, add your drained rabe to the pan. Sprinkle with S&P and saute for about 5-7 minutes, stirring/flipping occasionally. The rabe is already cooked, but I like to really infuse the flavors. ENJOY!
