I had this 2lb bag of sweet potatoes and had no clue what to do with them. I bought them because apparently they are full of vitamin A and other healthy vitamins. Naturally, I prefer a loaded baked russet potato, but I vouched to try and be more healthy this year. So I found a recipe to make baked sweet potato chips.
Ingredients:·
Step 1: Preheat oven to 400 degrees, with racks in center and lower positions
Step 2: Slice your sweet potatoes
*Tip: I used a mandolin slicer to cut my potatoes so they cooked evenly. I also found that if the potato was super hard, I threw it in the microwave for a minute or so to soften up slightly, this made it a little easier to slice.
Step 3: Spread out the sliced potatoes on a baking sheet (use 2 if you need) and coat with olive oil and salt. Make sure all chips are coated.

- 2-3 medium sweet potatoes, scrubbed and sliced 1/8 inch thick
- 1 tablespoon extra-virgin olive oil (use your good kind!)
- 1/2 teaspoon course sea salt
- Cayenne pepper (optional - if you want a lil kick)
