This is an easy weeknight meal that's healthy; low carb and only 5 ingredients!
Shopping List:
- 1 bag of frozen cauliflower
- 1 package of ground turkey meat
- 1/2 bag of frozen corn
- 2 cans of cream of mushroom soup
- 1 tbsp of butter
- Seasonings: S&P, paprika, garlic powder
Directions:
(Preheat the oven to 335')

- In a large frying pan, cook ground turkey until brown (no pink) add some S&P and garlic powder to taste.
- In a medium pot, boil water to defrost and heat the cauliflower
- Drain the cauliflower and add to a Cuisinart with some butter, S&P and garlic powder. Blend until creamy texture.
- Once meat is cooked, add the 2 cans of soup and mix well (you can also add some fresh mushrooms if you have some on hand).
- In a deep pie dish, layer the meat mixture, then frozen corn, and top with smash cauliflower. Sprinkle some paprika and S&P on top and a little bit of butter.
- Cook covered for 25 minutes then uncovered for 10 minutes.
