Who doesn't love sausage and peppers on a fresh roll?? This is an easy 5 ingredient recipe you can make on a weeknight or lazy Sunday afternoon. Cooking Ingredients:
--Place sausage in a large non-stick skillet, pierce the casing with a fork. [The local sausage I used was all natural so it wasn't very greasy. So I added some olive oil to the pan with some of the crushed garlic to help infuse the flavors and crisp the sausage.] --While sausage is cooking, in a separate large skillet add remaining olive oil and garlic, add green peppers. Cook on medium-low for about 5 minutes and then add onion. Season with salt and pepper and cook until veggies are cooked down to your liking, approximately 12-15 minutes. --Once the sausage was almost cooked, I chopped it up on a cutting board and added it back to original pan. I then added small can of tomato sauce, cooked until sausage was fully cooked (10 more minutes). --Then add the veggies, mix well, and serve on a fresh hoagie roll!! Ingredients: 1 lb. of Rigatoni pasta 1 bunch of Broccoli Rabe 1 lb. of hot or sweet Italian Sausage (I prefer spicy) 1/4 cup of olive oil 3 cloves of garlic sliced 1 tea spoon of hot pepper flakes, salt, and fresh ground pepper Parmesan cheese for topping Cooking Methods:
- In a frying pan, begin cooking the sausage. - Bring a large pot of water to boil. Blanch the broccoli for about 5 minutes or until soft. - While Broccoli is boiling, heat oil in a separate frying pan and cook garlic, pepper flakes, and S&P. - Drain the broccoli well, then add it to the garlic/oil pan. Toss and leave to cook in the pan. - Refill the large pot with salted water and bring to a boil. Cook the pasta until slightly al dente. (Save some starchy past water in a side cup). - Once sausage is cooked, slice into pieces and toss with broccoli rabe, oil & garlic. - Once pasta is cooked, add to the large pan of sausage, broccoli and oil. Add a few table spoons of starchy water to help toss and coat the dish. - Top with some fresh parmesan cheese and ENJOY! I threw this recipe together based off what I had in the fridge. You can adjust this recipe to your liking. Ingredients: - 3/4 box of penne pasta (Ronzoni Garden Delight tri-colored pasta was used here) - 1 package of fully cooked Chicken Sausage (I used Trader Joe's spicy flavored) - 2 cups of baby spinach - 2 gloves of garlic - chopped - 1 can of Rotel diced tomatoes and green chilies - 3-5 wheels of any flavor Laughing Cow cheese (I used swiss because it's neural flavored) - Handful of cherry peppers- chopped (optional) Directions:
- Preheat the oven to 350' degrees -Boil and cook penne to slightly past al-dente (Save some of the starchy water!) - Wile pasta is cooking, heat some about 1 tbsp of olive oil in a sauce pan. Add garlic, spinach and sliced chicken sausage. Cook for about 3 minutes, then add can of Rotels, cherry peppers and laughing cow cheese. Cook for a few more minutes. -Add a few tablespoons of the left over starchy water with penne pasta. Stir together. -Add mixture to a 9x13 pan and bake for about 15 minutes - uncovered. Enjoy!! |
