The above picture should be of the cooked meal, however, it smelled and looked so good that I just dug in and forgot to take a picture of the cooked chicken!
Ingredients:

- 1 (6-8) lb roasting organic whole chicken [Stop and Shop's brand Natures Promise is great buy for organic foods]
- 2 tablespoons of olive oil
- 1 lb of organic carrots, peeled and cut into 3 inch chunks.
- 3-4 large Russell Potatoes or Red Bliss potatoes if you prefer. Peeled and chopped into chunks
- Seasonings to your taste. I used fresh thyme [tyme :) ] springs, cumin, S&P, and garlic powder.

- Preheat the oven to 450'
- Place chicken in roasting pan along with veggies. Drizzle olive oil over chicken and rub over the chicken to ensure full coverage. Any remaining oil should be drizzled over veggies.
- Season chicken generously. S&P the veggies.
- Roast chicken at 450' for first 15 minutes. Reduce oven temperature to 350' and roast for 20 minutes per pound. (7 lbs = 2 hrs. 20 minutes). Internal temp of chicken should read 165' degrees F and juices should run clear.
