I truly hate wasting food. There was so much turkey left over from Thanksgiving, I decided to make a turkey pot pie. To my surprise this was very easy! I already had some of the veggies, just needed to pick up the pie crust. I also wanted to create my own rue since I'm trying to avoid processed foods.
While the oven is preheating to 400', start your rue. In a small sauce pan add butter to melt, slowly add flour, and chicken stock (I had made turkey soup from turkey carcass, so I used my turkey stock, but canned stock is fine too)
Then begin cooking your onions and garlic in a small saute pan. I used a small to medium size onion, chopped and a couple of garlic cloves. I know pot pies never really require garlic, but the Italian in my puts garlic in everything! I also added some spices including: salt, pepper, dried parsley and oregano.
Next, place your pie crust in a greased pie dish. Add your fresh or frozen vegetables, rue, and turkey meat. [I used some left over steamed carrots, a can of peas & carrots, and my onion/garlic mixture.]
Place the top of the pie crust and fold together the edges. I tried to make mine fancy and have the fork marks, but it became to cumbersome and I was hungry. So I just pinched the sides and it worked fine.
Bake for 30 minutes, until gold brown. Serve and enjoy!

Rue-
2 1/2 tablespoons all purpose flour
2 tablespoons of butter
1-2 cups chicken/turkey broth
1/4 teaspoon salt & pepper
Pie-
1 onion chopped
3 garlic cloves chopped
1/2 cup of carrots chopped (pre cooked/canned/or frozen)
1/2 cup of peas (same as above)
2 cups of shredded turkey meat.
Rue-
